How do you capture black and white images with a Canon Rebel XT 8 mp camera? Please advise and thank you in advance!

This can be done in the "Non Creative" modes …AV, TV, P, A-DEP and M then go to your menu (tool-2 with my XTi), tab over then down until you see monochrome and push the set button.
Power the camera to ON.
Put the selector to the P setting.
Press MENU on the back of the camera.
The display menu will have a symbol with a CAMERA1 and a symbol with a CAMERA2. (actual picture of a camera)
Press the right arrow to go to camera2.
Scroll down to parameters.
Press Set.
Press set again. Should highlight parameter 1.
Scroll down till it says b/w.
Press Set.
B/W should now be set. Take a picture to make sure it worked!
All images our eyes and a digital camera see are in color — specifically using red, green and blue. These are called additive colors meaning when you combine all three colors equally the result will be white light. Other combinations of red, green, or blue light produce the subtractive colors — red + green = yellow; green + blue = cyan; and blue + red = magenta. When all three subtractive colors are present equally they produce "black" or more commonly called neutral density. Black and white images using a digital camera are accomplished in the "processing" segment of your workflow — essentially in Photoshop or some other similar program (if one actually exists). In Photoshop go to "Image – Mode – Grayscale" or you could use the channel mixer — go to "Image – Adjustments – Channel Mixer – Monochrome."
